The SOFT-SET® Starch line is used in cold-processed spoonable salad dressings, instant desserts and cream fillings to provide gelling. This line of starches is produced from maize, forms a soft gel and is readily dispersed in cold or hot systems. SOFT-SET® Starch is suitable for use at low concentrations or in conjunction with sugar. It can be used in foods intended for immediate consumption.
