Introduction to KELCOGEL® F Gellan Gum

Fermentation-derived KELCOGEL® F Gellan Gum is a low acyl gellan gum with the ability to impart texture and high gel strength. It is unique in that forms clear, non-elastic fluid gels and suspends particulates for striking presentations that are cold/hot soluble and heat stable. It can be used alone or combined with other ingredients to produce a wide variety of interesting textures.
